Yummy leek and potato soup

I had a vague idea of how to make this so I just threw together a bunch of ingredients that sounded good together. Turned out great!

Recipe behind the cut.

3 tbsp butter or margarine
4 leeks
3 good sized potatoes
4 cups of chicken broth (or vegetable if you prefer)
1/2 cup milk
1/2 cup asiago cheese (shredded)
salt and pepper to taste

First, in a large sauce pan on medium-low heat melt the butter or margarine and add the chopped leeks along with a pinch of salt. Sweat the butter/leek mixture while you cube the potatoes (about five minutes). If it’s sizzling, you’ve got it too hot. When you’re done cubing the potatoes, add them in with the leeks along with the four cups of broth.
Bring the mixture to a boil. Once it starts boiling, reduce the heat and simmer for about 45 minutes or until the potatoes are soft.
Next, pour the soup into your blender and blend until smooth. Pour back into the pan and while the soup is still hot, add the milk, salt and pepper, and the cheese (or, if you prefer, serve the soup as is and sprinkle the cheese on top).

The first time I made this, I accidentally added too much cheese, but hey… cheese is yummy so it didn’t ruin it completely. :p

This also makes a pretty decent baby food if you leave out the cheese. Just make sure the soup has cooled before you put it in your kid’s mouth. I don’t want to get sued because you burned your child’s face off.
